Cedar Rapids chef wins competition

Chef Monkut Sayasit, representing Bata's in Cedar Rapids, has won the annual Quad-Citiy Taste of Elegance competition sponsored by the Iowa-Illinois Pork Producers Associations.

His winning entree was entitled Duo of Boneless Pork Country Ribs/sake lee cured sous vide bacon wrap char slu boneless pork ribs/boneless country rib kimchi-sausage/whipped tofu/smoked kimchi vegetables/puffed rice crumbles/garum vinaigrette gastrique/sweet chili-hoisin barbeque sauce. He received a check for $1,000 and is now eligible to represent the Quad-Cities at Pork Summit 2018 next spring in California.

Superior Chef Doug Lear of Bass Street Chop House, Moline, was awarded second place and $700. His entree was Double cooked boneless country style pork/Caul fat basted/Calabrian chili-orange glace/fennel fingerling potato confit/micro chive/basil coral.

Premier Chef Chris Carton of the Davenport RiverCenter won third place and $300 for his entree Muscovite and Wild Juniper Glazed Country Style Pork Ribs with 3 Smoke Pine Nut, Smoked Currants/Herbs and Blossoms Pickled Lotus Root crusted in Bee Pollen/White Carrot Charred over Spruce with fermented Koji Whipped Fingerling Potatoes smoked in Tea Leaf.

Carton also won the People's Choice Award and $250.
